Custard Apples
Delicious and nutritious, custard apples have been overlooked in recent years but now it seems they’re back in favour. Sweet, juicy and full of flavour, they can be enjoyed raw or as the basis of a variety of tasty dishes.
CUSTARD APPLE SMOOTHIE
Makes one large or two medium smoothies
200g custard apple flesh
200g chilled low fat vanilla yogurt
200ml chilled skim milk
- Put all the ingredients together in a blender.
- Blend until thick and smooth.
- Pour into one large glass or two medium glasses.
Tip: Scoop out the flesh of the custard apple with a teaspoon, making sure you remove all the seeds before using.
CARAMELISED CUSTARD APPLE BRUSCHETTA
Serves 2
2 slices plain or walnut sourdough, sliced on the diagonal
80g low fat ricotta
1 teaspoon maple syrup or honey
½ cup custard apple flesh
Cinnamon sugar
- Heat the grill. Toast the bread lightly on both sides.
- In a small bowl combine the ricotta with the maple syrup or honey.
- Spread this mixture over one side of the toast. Top it with generous pieces of fresh custard apple.
- Sprinkle it lightly with cinnamon sugar.
- Lower the grill heat to moderate and cook until the sugar begins to turn golden and the bread is toasted around the edges.
Tip: If you can’t buy cinnamon sugar simply make it by combining 1 tablespoon of sugar with ½ a teaspoon of cinnamon.
